Beef
The ribs come from the rib and plate, situated under the front section of the backbone of the cow. Short ribs consist of a short portion of the rib bone, which is overlain by meat which varies in thickness. The 'short' in short ribs refers to the fact that this cut of meat includes only a portion of each long rib bone.
